Chef Mark Shadle

Chef Mark Shadle, a pioneer and visionary in plant-forward cuisine, has earned acclaim and the status of Master Vegan Chef over his illustrious three-decade career. As a member of the American Natural Foods team, he clinched two gold medals at the Culinary Olympics in Germany, solidifying his leadership in the vegetarian and vegan movement. In June 2018, Chef Mark’s dedication to promoting healthier food choices earned him a prestigious invitation to the White House from First Lady Michelle Obama. His involvement in the “Chefs Move to Schools” initiative showcased his commitment to educating children about the significance of organic farming and nutritious foods.

Transitioning through various culinary ventures, including ownership of the renowned “It’s Only Natural Restaurant” in Middletown, Connecticut, for over 25 years, and G-Zen in Branford, Connecticut, earned accolades such as being named one of the “Top 5 Vegan Restaurants in the USA” by Travel + Leisure and Vegnews. As well as the highly successful “G Monkey Plant-Fueled Fast Food” flagship location in West Hartford, which was rated as the top vegan restaurant in Connecticut prior to its closing in January 2024 to pursue his next endeavors, Chef Mark has solidified his legacy.

Now, he returns to his first passions— the “G-Monkey Fast Food Truck,” established in 2010, and his organic historic Shadle Farm located in Durham, Connecticut. Alongside the ZenNourished TM** events, Puerto Rico adventures, and curated experiences, Chef Mark continues to shape the landscape of plant-based cuisine, showcasing his mastery as a pioneer and visionary in the field.

She firmly advocates for taking responsibility for one’s own health and embraces a holistic approach, emphasizing the power of “food as medicine” and the significance of detoxification for body, mind, and spirit. Ami’s expertise has garnered personal endorsement from the renowned New York Times best-selling author, Anthony William (Medical Medium), who proudly penned the foreword for her latest cookbook, “Peace Begins on Your Plate.”

In addition to her credentials as an I-Act certified Colon Hydrotherapist, graduate of the Institute of Integrative Nutrition (IIN), L.L.C.I Certified Raw Foods Chef and Educator, Detoxification Specialist from the Optimal Health Institute, Holistic Health Coach, Master Energy Healer, and Author & Motivational Speaker, Ami was also a co-owner of the highly acclaimed restaurant, G Zen™ , in Branford. G Zen™ went on to be named one of America’s top vegan restaurants in the USA by Travel + Leisure magazine and received many other highly acclaimed awards.
